About

Adán Fausto, is a first generation Mexican-American, who grew up in Los Angeles, California and graduated from the Culinary Institute of America. He has cooked in Michelin starred kitchens for over 20 years. Adán has trained in the kitchens of Daniel Boulud, Alain Ducasse, Thomas Keller, Jose Andres, Michael Mina, and Gabriela Camara of Contramar. He also spent time cooking in Denmark, which gave him appreciation for seasonality and locality. In the past few years he moved to Portland, Oregon and cooked at Ava Gene’s. He also has ran two success summer pop ups with Paradise Mariscos and his own, Tacos Con Onda in 2021. On his off time, he loves to hangout with his wife and explore the beauty of Oregon. His cuisine has come full circle and he is exploring his Baja Mexican heritage with Mariscos Con Onda.
